Warm weather means light food and salads. When it comes to summer I like to eat salads for dinner, especially pasta salads. Orzo salad is easy to make and the taste is delicious. Like to share my great recipe with you, Enjoy!
Ingredients
¾ cup orzo
2 cups water
2 medium shredded carrots
½ cup chopped Italian parsley
½ cup chopped green bell pepper
¼ cup chopped fresh mint leaves
¼ cup chopped fresh dill
1 medium chopped cucumber
For the Vinaigrette
1 tbsp lemon balsamic
2 tbsp lemon juice
3 tbsp extra virgin olive oil
A pinch of salt
A turn of freshly ground black pepper
Preparation
Cook the orzo in a large pot of boiling salted water. Cook until the orzo tender ( about 7 minutes). Rinse with cold water then drain. Transfer the orzo to a large bowl and toss. Set aside to cool. Toss the orzo with shredded carrots, Italian parsley, bell pepper, mint leaves, dill, and cucumber.
In a small bowl combine olive oil, lemon juice, lemon balsamic, salt and black pepper. Add dressing to the orzo then toss.
Serve at room temperature. Enjoy!
