VEGETABLE FRITTATA

Fritata is great meal for breakfast, lunch or dinner. It is vegetarian and low carb.

It meant to use up leftover cheese, vegetables, herbs and bake them with eggs. This frittata recipe is very versatile and makes a great quick-easy meal.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup onion, chopped
  • 1/3 cup green pepper, seeds removed and chopped
  • 1 cup asparagus, cut into 1 inch long pieces
  • 2 cups baby spinach
  • 1 medium potato, diced into small cubes
  • 5 eggs
  • Salt and freshly ground black pepper
  • 1/3 cup mozzarella cheese or parmesan cheese

Directions

Preheat oven to 420 degrees F.

In a large skillet heat the olive oil and butter over medium-high heat. Add the onion and green pepper, saute until softened, about 5 minutes. Add the potatoes, asparagus and cook for 5 min.

Add spinach, stir and cook until the spinach is wilted.

Season the veggies with a little salt.

Meanwhile, in a large bowl, combine the eggs salt and pepper. Whisk until blended.

Pour the egg mixture over the top of the veggies. Grate the parmesan cheese over the top of the eggs.

Cook, without stirring, for 3 min.

Place the frittata in the oven and bake 10 min.

Serve warm. Enjoy !
