Tabbouleh is a Levantine vegetarian salad that made mostly bulgur or couscous… Easy to make and full of flavor salad. It is so refreshing, light and delicious!
Ingredients
1 cup bulgur
1 cup of water
1/4 cup olive oil
1/2 cup chopped cucumbers
1/2 cup chopped fresh mint
2 cups chopped fresh parsley
1/4 chopped tomatoes
1/4 cup fresh lemon juice
To taste: salt and blackpepper
Directions
Place the bulgur in a large bowl and mix in boiling water. Cover the bowl with paper towel or large pan. Let stand until bulgur is tender and all of the water is absorbed.
Whisk oil, lemon juice, salt and blackpepper in a small bowl.
Pour the dressing over the bulgur and stir. Add the other fresh veggies. Stir until combined.
