As you know, I love to eat healthy food, especially in the summer. Summer days, sometimes I only cook baked sweet potato and drinks for dinner. It is totally my favorite meal and love to combine with super perfect parmesan kale salad. If you’re looking for a summer dinner or lunch recipe, this is for you!
Ingredients:
2 large sweet potatoes
3 tbsp olive oil
Freshly ground black pepper
A pinch of salt
Directions:
Preheat oven to 400 degrees. Wash the sweet potatoes and slice them into large size pieces. Place the sweet potatoes on the baking sheet. Drizzle the sweet potatoes with the oil and sprinkle each potato with just a pinch of salt… then add freshly ground black pepper. Bake the sweet potatoes for 30 minutes, until soft. Remove them from the oven.
